Churro Chex Mix



  • 4 cups rice chex cereal
  • 4 cups corn chex cereal
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup light corn syrup
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon baking soda


Preheat the oven to 350 degrees F and line one or more wide baking sheets with parchment paper.

Put cereal in a big bowl and keep it near your desk. Set aside a medium bowl containing the sugar and cinnamon.

Bring brown sugar, butter, and corn syrup to a boil in a medium saucepan over medium heat. Cook for 1 minute, stirring constantly.

Remove the pan from the heat and whisk in the baking soda before pouring the mixture over the cereal.

Toss all together until it's evenly covered, then move to a baking sheet lined with parchment paper. Place the baking sheet(s) in the oven and sprinkle the cinnamon sugar mixture over the cereal.

Bake for 6 minutes, then flip and bake for another 2-3 minutes, or until golden brown.

Remove the mixture from the oven and set it aside to cool before breaking it up and placing it in an airtight jar.
