Blooming Quesadilla Ring

Ingredients

2 CUPS COOKED AND CHOPPED CHICKEN MEAT

1 ZION, CHOPPED

1 RED BELL PEPPER, CHOPPED

1 JALEPEÑO, DICED

1 STORE-BOUGHT TACO SAUCE

20 TACO-SIZED TORTILLAS

3 CUPS GRATED CHEDDAR CHEESE

3 CUPS GRATED MONTEREY JACK CHEESE


Preheat the oven to 375˚F. Line a baking sheet with parchment paper. Place chicken, onion, red bell pepper, jalapeño and taco sauce in a large bowl and stir to combine. Set aside.


Cut each tortilla in half. Place about 2 tablespoons of cheddar cheese, Monterey Jack cheese, and chicken mixture evenly on each tortilla half.


Roll the tortillas into cones. Start at the cut edge, being careful not to push the ingredients out of the tortilla.


Place a wide-mouthed jar or cup in the center of the baking sheet. Using about 13 tortilla cones, place a ring around the jar. The tops of the cones should be in the center, touching the jar. Sprinkle a layer of cheddar cheese and Monterey Jack on top. Repeat with the remaining cones to make 2 more layers, finishing with the remaining layers of cheddar cheese and Monterey Jack.


Remove the glaze from the center of the ring. Bake until the cheese is melted and the edges of the tortilla are crisp, 15-20 minutes.


Carefully transfer the floured quesadilla to a serving platter. Place the dip of your choice in the ring and top with the desired dip.
